How to Buy Good Dahlias
Buy dahlias open, or very nearly so. This is the opposite of most flowers and it matters: a dahlia cut in tight bud will not continue opening in the vase. Check the back of the flower where the petals meet the stem. Browning or softness there means it is older than it looks from the front. The center should be tight.
Season, Availability and What Drives the Price
Midsummer until the first frost, and almost entirely local. Dahlias have hollow stems, bruise readily and do not survive long-distance shipping well, so unlike most of the flower trade they are not flown in year-round from the equator. In practice that means excellent, cheap, spectacular dahlias for a few months from local growers and farmers' markets, and essentially none the rest of the year. Any winter dahlia will be expensive and disappointing.
What to Use Instead
Large chrysanthemum blooms give similar scale and form with far better vase life. Zinnias cover the same bright summer territory. Garden roses substitute for the fuller, many-petalled dahlia types in wedding work at a higher price.

Hot water conditioning helps
Standing freshly cut stems in five centimetres of very hot water for a minute, then moving them to cold, noticeably extends their life. It clears the hollow stem.
Change the water daily
Hollow stems foul water faster than solid ones. Daily changes are not optional with dahlias.

Why can't I buy dahlias in winter?
They do not ship well. Hollow, easily bruised stems and a short vase life mean dahlias are essentially a local, seasonal crop rather than an imported year-round one. Most of the flower trade works the other way round.
Will dahlia buds open in the vase?
No, or barely. Unlike lilies or peonies, a dahlia cut tight stays tight. Buy them open.
How long do cut dahlias last?
Four to seven days. Hot-water conditioning when you first cut them and daily water changes will get you to the top of that range.
